Tasty summertime fried pies

I hope everyone is having a great summer!  We've had plenty of fun with little trips and hikes and just enjoying the great weather.  We haven't heard the ice cream truck this summer, but we've had a lot of fun making homemade ice cream in a Ziplock bag (google it, it's fun and tasty!), concocting all sorts of homemade popsicles,  and little fried pies with berries from our garden.   Here's the recipe I used for the fried pies.  Passed down from my great grandmother, this tasty treat is a cinch to make and super delicious!


PASTRY
2 CUPS FLOUR
1 TSP SALT
1.5 TSPS BAKING POWDER
1/3 CUP SHORTENING OR UNSALTED BUTTER
ABOUT 1/2 CUP MILK
      Combine flour, salt, and baking powder; cut in shortening.  Gradually sprinkles milk over flour mixture.  Stir lightly until mixture forms a ball.  Yields about 3-4 small pies.

FILLING
1 CUP CHOPPED APPLES (or other fruit of choice)
3/4 CUP SUGAR
1/4 TSP GROUND CINNAMON
1 TBS BUTTER
     Combine freshly chopped apples  and water in a saucepan.  Cook over medium heat 10-15 minutes or until fruit is tender.  Stir in next four ingredients.
     Divide pastry into 3-4 balls and roll out.  Fill with fruit mixture and fold over and pinch tight for half moon shape. 
     Heat oil in large skillet.  Cook pies until golden brown on both sides; turning only once.  Drain well on paper towels.
